Ingredients

  • 4 oz chicken breast (pre-cooked)
  • 1 medium red onion
  • 2 cups baby spinach
  • Black peppercorns
  • 1/2 fresh lime or lemon
  • 1 teaspoon cooking oil (I recommend olive, coconut, or avocado oil)
  • Cast iron skillet

Directions

  1. Cut your (pre-baked) chicken into small 1/2 inch x 1-inch strips.
  2. Wash, peel, and chop your onion into rings.
  3. Heat cast iron skillet on the stove for 30 seconds (medium temperature). Note: if you heat it up any longer than this before adding the oil, you put yourself at danger for the oil splashing on you.
  4. Add 1 teaspoon cooking oil and use a paper towel to spread a very thin layer of oil evenly across the skillet.
  5. Allow the skillet to continue to heat for an additional minute
  6. Evenly distribute chicken and onions on the skillet, allowing them to sizzle for 5 minutes or until grill marks are achieved.
  7. Sprinkle some ground peppercorns on the chicken/onions.
  8. Squeeze your 1/2 lime/lemon on the chicken/onions.
  9. Flip chicken/onions to other side and let sizzle for 5 minutes.
  10. Once you are satisfied with the grill level of the chicken/onions, turn off the stove and fold baby spinach into the chicken/onions.
  11. Once spinach is softened/cooked by the steam, plate and enjoy, inshaAllah (Godwilling)

Notes

You can use this indoor grilling tips for any other things that you normally grill outside. Indoor grilling is a lot healthier, as it doesn't have the conventional fumes and chemicals found in traditional outdoor grilling. It's also easier to clean. :)
